Japanese Vinegar Drink Packaging for Applied Kansei Center
Kahisu is the Japanese vinegar drink with an ethical message, which is first in Japan. That is made from bitter orange peels, which previously were discarded after squeezing the juice. The design concept is Artistic Design for Ethical Choice. To express two new flavors blending the vinegary, the sweetness of fruit, and the bitterness of bitter orange peels, and the special moment of drinking them, a champagne-type bottle used, overlapped the worldview of two great artists, Gauguin (Blend G) and Monet (Blend M). The gift box uses minimal cardboard material to hold two bottles beautifully.

Kahisu is a new Japanese vinegar drink with an ethical message, made from bitter orange peels, which was previously discarded after squeezing the juice. The design concept is Artistic Design for Ethical Choice, for the earth, for children 100 years from now. In order to express the novel taste and the artistic aspect common to the taste, a champagne-type bottle, a shape not generally used for Japanese vinegar drinks, was adopted, and the graphics were in the style of paintings.

The technology to ferment bitter orange "peels" to produce vinegar was developed, and Japan's first "fruit peel vinegar drink " was born. In order to embody the ethical message, we used recycled materials for the bottle and label in consideration of the environment.
A major challenge for the project team was to develop Japan's first vinegar drink with new values that would set it apart from existing vinegar drinks in both taste and packaging. Based on the concept formulated by the producer, researchers, manufacturers, and designers worked together as a team to arrive at the final form of new taste and design.
The project started in Hiroshima, Japan in September 2021 and has been on sale at the online store since August 2022. The client is a long-established vinegar manufacturer founded in 1582.
The role of Kahisu is to deliver to your loved ones the excitement you experience when you drink it with sparkling water or spirits (whiskey, gin, rum, etc.), and the thoughts that will lead to the future 100 years from now as expressed in the design concept. Kahisu will be sold for gift use only to relay the ethical message of caring for the future of society and the earth.
A new vinegar drink was born, characterized by a "bittersweetness" like black coffee, as a result of research experiments using Kansei engineering using a large number of taste samples in which the proportions of taste components were subtly controlled. In order to convey its deep and artistic taste and ethical message, the shape and materials of the bottle, cap, and label were repeatedly examined to achieve a design that simultaneously expresses "Artistic Design" and "Ethical Choice".
Kahisu is a Japanese vinegar drink with new values. Two new flavors, blending the vinegary and sweetness, of conventional vinegar drinks with the bitterness of bitter orange peels, are expressed in the worlds of the works of two artists. The fruity flavor Blend G was inspired by Paul Gauguin's tropical landscapes and people, while the fresh and refreshing flavor Blend M was inspired by Claude Monet's landscape paintings of water lilies.
